Flavorful Vegetable Mushroom Fried Rice
This flavorful mushroom fried rice is easy and quick to make. An excellent way to make a great meal on a budget. A great idea on how to use that leftover cooked rice that is sitting in your refrigerator.

1 cooking mixing spoon
- 2 tbsp avocado oil
- 3 cups cold cooked organic parboiled rice (450 grams)
- 1 large bell pepper (diced)
- ½ medium purple onion (thinly sliced circles)
- ½ medium yellow onion (thinly sliced circles)
- 4 cups sliced shiitake mushrooms (310 grams)
- ¼ cup gluten free soy sauce (60 ml)
- 4 cloves garlic (minced)
- ¼ tsp salt
- 2 tsp fresh ground black pepper
- 1 cup green sweet peas
- ½ small scotch bonnet pepper (diced) (optional)
- 2 cup soya vege protein meat chunks (soak in bowl filled halfway with water for 20 mins)
In a large skillet, heat the vegetable oil on medium high heat. Reduce heat to medium heat, then add the minced garlic.
Add the sliced purple onion
Add the sliced yellow onion
Add the sliced shiitake mushrooms
Add scotch bonnet pepper
Add soya vege protein meat
Saute all ingredients on low heat for 5 to 10 minutes
Increase heat to medium, then add the cold previously cooked ricealong with soy sauce then stir it frequently for 2 to 3 minutes. Keep doing this until the rice is evenly heated. Lower heat to low and let everything simmer for 2 mins, then turn off the stove.
Garnish the rice with salt and ground pepper. Stir the rice once more.
The fried rice should now be ready to serve.
