Coconut Chia Seeds Pudding
Make this quick and easy, but delicious Coconut Chia Seeds Pudding.

Calories 360 kcal
- 1 can light coconut oil (14 ounce can)
- 5 tbsp chia seeds
- 1 tbsp maple syrup (or aguave syrup)
- ½ tsp pure vanilla extract
- 1 pinch kosher salt
In a medium mixing bowl or large liquid measuring cup, and use a fork to stir together the coconut milk, chia seeds, maple syrup, vanilla, and salt so that the chia seeds are thoroughly mixed
Leave it overnight in the fridge.
In the morning, stir once more to evenly combine the seeds throughout.
Taste and add more maple syrup if you'd like it a bit sweeter.
Portion into your bowl.
Add toppings of choice.
