Coconut Chia Seeds Pudding

Ingredients
  

  • 1 can light coconut oil (14 ounce can)
  • 5 tbsp chia seeds
  • 1 tbsp maple syrup (or aguave syrup)
  • ½ tsp pure vanilla extract
  • 1 pinch kosher salt

Instructions
 

  • In a medium mixing bowl or large liquid measuring cup, and use a fork to stir together the coconut milk, chia seeds, maple syrup, vanilla, and salt so that the chia seeds are thoroughly mixed
  • Leave it overnight in the fridge.
  • In the morning, stir once more to evenly combine the seeds throughout.
  • Taste and add more maple syrup if you'd like it a bit sweeter.
  • Portion into your bowl.
  • Add toppings of choice.
  • Enjoy!
