Coconut Chia Seeds Pudding
Make this quick and easy, but delicious Coconut Chia Seeds Pudding.
Equipment
- 1 bowl
Ingredients
- 1 can light coconut oil (14 ounce can)
- 5 tbsp chia seeds
- 1 tbsp maple syrup (or aguave syrup)
- ½ tsp pure vanilla extract
- 1 pinch kosher salt
Instructions
- In a medium mixing bowl or large liquid measuring cup, and use a fork to stir together the coconut milk, chia seeds, maple syrup, vanilla, and salt so that the chia seeds are thoroughly mixed
- Leave it overnight in the fridge.
- In the morning, stir once more to evenly combine the seeds throughout.
- Taste and add more maple syrup if you'd like it a bit sweeter.
- Portion into your bowl.
- Add toppings of choice.
- Enjoy!
